We Americans are both connected and disconnected from our Old World roots. As we say on every bottle, Gamle Ode is Nordic-inspired, for the Scandinavian at heart. Our aquavits are traditional, but also uniquely Scandinavian-American.

True to ourselves we continue our bold American aquavit experiment of one, and inspired by the barrel-aged aquavits of Norway that are rarely imported here, we pulled our Dill Aquavit recipe–dill, caraway, and juniper-infused in a corn-dominant 45th Parallel produced grain alcohol base–then distilled and finished it over three years seven months in French Oak barrels used to age Red Zinfandel–likely the oldest aquavit ever produced in North America.

Key ingredients of corn and fresh dill are grown from three farms located within a twenty-five-mile radius of our distillery, as locally sourced as possible, used in true small batch, handmade production. We then bottled this aquavit at a higher 90 proof to provide the bartender and drinker more of the full spirit. This effort combines the best of both worlds: Scandinavian aquavit and American maturing craft spirit innovation.
